If you want to try this one, it’s actually super simple:
-cut pumpkin in half
-Take out the stringy guts and seeds
-save seeds, wash, salt and roast if you want
-oil up the pumpkin bottom and top
-bake pumpkin on like 350 for 45-50 mins
-then skin it
-throw the good meat in a blender
-cheesecloth all of the extra runny juice
-add two eggs and a yolk(per pie)
-add 1 can condense coconut milk
-add w/e else spices you want. Cinnamon, ginger, clove, salt
-I should have added a tiny bit of brown sugar toh. That probably would’ve set this thing off..
-mix everything and pour into a pie crust
Bake that thang on 375 for a good 40-60 mins. Enjoy
